This one needs a bit of planning, but its really mouth wateringly tasty! (of course
)
Get yourself 1-2 big lettuces, and carefully separate out the leaves. Each leaf should be nice and big. Wash the leaves carefully, put them in a bowl and refrigerate them. They need to stay in the fridge for about 1-2 hours so they are nice and crispy and cold when its time to eat…
Put a little more than half a packet of soya chunks (remove them from the packet first
) in water and boil them until cooked. Drain the water and squeeze the chunks dry.
Cut up some veggies of your choice into small chunks, (i used broccoli, zucchini, french beans, carrots, spinach and mushrooms) in whatever proportions you like… Heat up a vessel of water to boiling and put the veggies that need heavy cooking (mushrooms, spinach and zucchini don’t) in a sieve and dunk them in the hot water for a few minutes to partly cook them. Alternatively you could steam the veggies…
To steam the veggies, put them in a sieve above a vessel with boiling water in it, and let the steam cook them… takes just a few minutes and is an extremely healthy way to cook veggies.
Heat up a good amount of ghee in a pan, add a tablespoon of grated fresh ginger, a tablespoon of garam masala and 2 tablespoons of dhania Jeera powder. You could also add some garlic paste if you wish. Roast and cook the masalas well. Now add the squeezed soya chunks to it and let cook and absorb all the masalas. Add salt to taste.If you want to make it richer add some butter.
Next add the steamed or partly cooked veggies and let them absorb the masalas, don’t overcook, the veggies should retain their colour and crispiness. Finally add the spinach, mushrooms and zuchinni and leave on the heat for about 3 minutes more.
Spoon a decent amount of the piping hot veggie mixture onto the crisp cold lettuce leaf. Gently fold it over the veggies and eat immediately!
The recipe above makes the mixture indian style, it could be made chinese style by replacing the masalas with soya sauce and some ginger garlic chilly paste. Basically, the veggies need to be in utter contrast to the coolness of the lettuce…

Finally!! I cooked it 3 days back. At 12 in the night my bro and I were cooking it!! Hilarious it turned out to be. I started it the Chinese style ended up adding some spices but the true blooper came in when too much of the stuffing remained and my bro and I ended up eating it with curd rice!! (He relished it anyway)
